Asian Chicken Salad with Asparagus and Red Peppers
Roasted chicken breast, asparagus and red peppers are tossed in a peanut, ginger, soy dressing, and topped with scallions and sesame seeds. Served on a bed of rice noodles in individual kraft paper take out containers with chop sticks, or on a platter family style.
We recommend accompanying this dish with vegetable summer rolls served with carrot ginger dipping sauce.
